1. Blanch the green beans in a pot of boiling water for 2-3 minutes, or until they are bright green and tender-crisp. 2. Drain the green beans and rinse them under cold water to stop the cooking process. 3. In a large bowl, combine the olive oil, lemon juice, garlic, salt, and pepper.
