– 2 tablespoons lemon juice – 2 tablespoons olive oil – 1 teaspoon salt – ½ teaspoon black pepper

1.Cook the orzo according to package directions. Drain and rinse under cold water until cool.

2.While the orzo is cooking, cook the shrimp. Preheat a grill pan or skillet over medium-high heat. Add the shrimp and cook for 3-4 minutes per side, or until pink and cooked through.

3.In a large bowl, combine the cooked orzo, cooked shrimp, cherry tomatoes, cucumbers, dill, parsley, red onion, and feta cheese
